Fresh Blue Corn Tortilla

At the apartment, we’ve settled on tortilla and sides as our indulgent dinner. The variety and variability of this dinner formula just feels so decadent without it being complicated to make or expensive.

“A friend of mine grew some blue corn and milled it. Do you want it?” Of course, I accepted this mysterious magi’s gift in a ziplock bag.

The ground meal was coarser and heavier than I expected. The color was lighter, more of a greyish purple with the occasional dark flake. I could feel that the grains were triangular when I rubbed them between my fingers. All in all, it measured 2 cups exactly.

blue-corn tortillas, salsa verde, caramelized onions, calabacitas,carnitas, a plate of cilantro, cucumbers, lime slices, avocado.
